Quick and easy Air Fryer Chicken Fajitas are loaded with amazing flavor at only 150 calories and 2g net carbs per serving making it a great high protein low-carb option! The chicken cooks up perfectly tender and juicy in under 30 minutes and is great for meal prep or busy weeknights!

Ingredients
- 2 chicken breasts about 1lb, sliced into ¼ inch thick strips
- 2 bell peppers sliced into strips
- 1 red onion sliced into strips
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 Tablespoon chili powder
- ½ teaspoon EACH smoked paprika, cumin, ground coriander, garlic powder, onion powder, salt
- ¼ teaspoon black pepper
To serve
- Tortillas, sour-cream, avocado, lime slices, fresh cilantro
Instructions
- Preheat air fryer to 400°F.
- In a large bowl, add the chicken, bell peppers, onion, and garlic. Drizzle with olive oil and spices and gently mix together until the chicken is fully coated in the spice mixture.
- Transfer to the preheated air fryer basket and cook for 15 minutes, shaking halfway, or until fully cooked, or until the edges of the vegetables become lightly charred. If your air fryer basket is small, you may need to cook in 2-3 batches.
- Remove from the air fryer and garnish with cilantro. Serve on tortillas or rice along with avocado, sour cream or guacamole.

- Storage: Once completely cool, place chicken and veggies in an airtight container in the refrigerator for 3-5 days.
- Reheat: Add the leftovers to the air fryer and set it to 350 degrees. Cook for 3-5 minutes until it is heated through.
