Instructions

  1. Preheat your air fryer to 370°F (188°C) and lightly grease the basket with cooking spray or line it with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, egg, breadcrumbs, finely chopped yellow onion, baby spinach (if using), grated parmesan cheese, Dijon mustard, minced garlic, chopped parsley, paprika, salt, black pepper, red chili flakes (if desired).
  3. Gently mix all the ingredients together using your hands. Avoid overworking the mixture to ensure tender meatballs.
  4. Shape the mixture into 16 - 20 meatballs using a scooper or your hands, and place them on a plate.
  5. Once the air fryer is preheated, arrange the meatballs evenly in the basket, ensuring they do not overlap. If your air fryer is small, cook the meatballs in batches.
  6. Air fry the meatballs for 8 - 10 minutes, flipping them halfway through the cooking time. Make sure the internal temperature of the meatballs reaches 165°F (74°C) to ensure they are fully cooked.
  7. Serve the delicious chicken meatballs with your favorite marinara sauce or pesto, on a bed of pasta or zucchini noodles, and garnish with fresh basil for added flavor. Enjoy!

Notes

  • Air Fryer Oven: you can use an air fryer oven for this recipe. Follow the exact instructions for cooking and ensure the meatballs are evenly spaced on the parchment-lined rack.
  • Don’t Overwork the Meatball Mixture: Gently mix the meatball ingredients until just combined. Overmixing can result in tough and dry meatballs.
  • Ground Turkey: you can substitute ground turkey for ground chicken in this recipe. The flavor and texture may differ slightly, but the recipe should work well. They are both lean, healthy protein sources.
  • What to serve with chicken meatballs: 10+ suggestions, read in the blog post above!
  • What’s the best egg substitute for meatballs? Read in the blog post above.
  • Freezing Uncooked: Freeze raw meatballs by shaping the mixture into balls, arranging them on a baking sheet, and freezing until firm. Then, transfer the frozen meatballs to an airtight container or freezer-safe bag and store them for up to 2-3 months. When ready to use, air fryer them directly from frozen, adding 2 – 3 extra cooking minutes.
  • Freezing Cooked: You can also freeze cooked meatballs. Allow them to cool to room temperate, transfer them to a freezer-safe container, and store them for up to 2-3 months. Follow the exact reheating instructions below.
  • Storing: Store leftover cooked chicken meatballs in an airtight container in the refrigerator for up to 3 – 4 days.
  • Reheating: For best results, microwave gently, air fryer for 5 – 6 minutes at 350°F, or warm in a covered skillet with a bit of liquid to prevent drying out.
