Description

The recipe starts by blending buffalo sauce with honey to create a glaze for the chicken. Chicken breast pieces are breaded using a mixture of flour, crushed cornflakes, and Mexican seasoning, then air fried until crispy following an air fryer chicken tenders method. After cooking, the chicken is brushed with the honey buffalo sauce and briefly cooked again to set the glaze.

These flavorful chicken strips are then assembled into mini tortillas with shredded iceberg lettuce, coleslaw, crumbled feta, ranch dressing, and fresh chopped cilantro, offering a combination of textures and flavors: crunchy chicken, creamy and tangy dressings, crisp lettuce, and a touch of fresh herb aroma.

  • 360 g chicken breast
  • 1 egg whisked
  • 2 tablespoon flour
  • 50 g cornflakes crushed
  • 2 tablespoon Mexican seasoning
  • 50 ml buffalo sauce
  • 2 tablespoon honey
  • 4 tortilla wrap mini size
  • 100 g iceberg lettuce shredded
  • 100 g coleslaw
  • 20 g feta cheese
  • 4 tablespoon ranch dressing
  • 10 g cilantro chopped, fresh

Instructions

  1. In a small bowl, combine the 50 ml Buffalo sauce and 2 tablespoon Honey.
  2. Using 360 g Chicken breast, 1 Egg, 2 tablespoon Flour, 50 g Cornflakes and 2 tablespoon Mexican seasoning, cook the chicken according to our Air Fryer Chicken Tenders recipe.
  3. Once cooked, brush the chicken with the honey Buffalo sauce.
  4. Cook at 200°C/400°F for 2 minutes.
  5. Assemble your tacos with 4 Mini tortilla wraps, 100 g Iceberg lettuce, 100 g Slaw and the cooked chicken.
  6. Drizzle over 4 tablespoon Ranch dressing and crumble over 20 g Feta. Finish off by sprinkling over 10 g Fresh coriander (cilantro).
