Description
Air Fryer Chicken Taquitos combine shredded cooked chicken with Mexican blend cheese and taco seasoning, rolled tightly inside corn tortillas. The tortillas are briefly heated to make them pliable, then sprayed lightly with olive oil to help them crisp in the air fryer. Cooking at 400°F for about 10 to 12 minutes results in taquitos that are golden brown and crisp on the outside, while the filling stays moist and flavorful.
The taco seasoning imparts a familiar, mildly spiced flavor to the chicken, complemented by melted cheese that adds a creamy texture against the crispy shell. The air fryer method reduces excess oil compared to deep frying, making these taquitos less greasy but still deeply satisfying.

Ingredients
- 2 cups chicken shredded, cooked
- 3/4 cup Mexican blend cheese shredded
- 2 tablespoons taco seasoning
- 10 corn tortilla medium sized
- lettuce salsa, guacamole, sliced avocado, sour cream, sliced jalapenos, shredded, for topping options
Instructions
- Stir together the shredded chicken, shredded cheese, and taco seasoning in a medium bowl.
- Wrap the tortillas in a damp paper towel and heat them in the microwave for 30 seconds, or just until you can roll them without ripping or tearing the tortillas.
- Spray both sides of a corn tortilla with olive oil spray, or brush it with olive oil.
- Add a heaping spoonful of the seasoned shredded chicken and cheese to the center of the tortilla and roll it into a tight log and place it seam-side down in the air fryer basket.
- Repeat with the remaining taquitos, placing as many as will fit without overcrowding the basket.
- Spray the tops of the taquitos with olive oil spray again.
- Cook at 400 degrees F for 10-12 minutes, or until the taquitos are crisp and golden brown.
- Garnish with your desired toppings and enjoy immediately. I do not recommend storing the taquitos as they will become less crisp as they sit.
