Description

The recipe begins by mixing cooked shredded chicken, beef, or pork with diced onion, canned green chiles, cumin, chili powder, garlic powder, salt, and black pepper. The filling balances savory spices with the mild heat of chiles and aromatics. Warming the tortillas makes them pliable for rolling.

Each tortilla is filled with the meat mixture, refried beans, and cheddar cheese, then rolled tightly with the edges folded to enclose the filling, using toothpicks if needed to secure them. After preheating the air fryer to 375°F, the rolled chimichangas are lightly brushed or spritzed with cooking oil to promote crisping.

Air frying for 6-8 minutes cooks the tortillas to a crisp, golden finish without the need for deep frying oil. The chimichangas are turned halfway through cooking for even browning.   • 2 cups chicken beef, or pork, shredded, cooked
  • 1/2 cup onion or yellow onion, finely chopped; white onion
  • 1 (5 ounce can) diced green chiles
  • 1 teaspoon cumin ground
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce can) refried beans
  • 1 cup cheddar cheese shredded
  • 8 large flour tortillas burrito size
  • cooking oil for frying

Instructions

  1. In a large bowl, combine the cooked meat, green chiles, diced onion, cumin, chili powder, and garlic powder. Season with salt and pepper to taste.
  2. Warm the tortillas by wrapping them in a towel and microwaving for 30-45 seconds.
  3. Spoon about 1/2 cup of the meat mixture, 2 tablespoons of refried beans, and a sprinkle of cheese onto each tortilla. Tightly roll up the tortilla and place it fold-side down on a baking sheet. Use a toothpick if necessary to keep it from unrolling.
  4. Preheat the air fryer to 375 degrees Fahrenheit.
  5. Lightly spritz or baste the chimichangas with cooking oil. Air fry for 6-8 minutes, flipping halfway through if needed. Work in batches if necessary.
  6. Let the chimichangas cool for 1-2 minutes before serving. Enjoy!
