Air Fryer Christmas Cookies Recipe
Description
Air Fryer Christmas Cookies combine classic cookie ingredients like butter, sugar, and eggs with instant vanilla pudding mix to ensure a soft and tender crumb. The inclusion of shortening alongside butter helps create a light texture. After mixing the dry ingredients including all-purpose flour, baking powder, and salt, they are incorporated gradually to keep the dough balanced. The cookie dough balls are flattened and adorned with red and green M&Ms, which provides a festive appearance. Cooking in the air fryer allows the cookies to bake quickly at 350°F until they become set and golden around the edges.
The cookies offer a chewy bite with slight crispness on the outside, thanks to careful baking in the air fryer and the presence of the pudding mix. They can be served during holiday gatherings or as a seasonal gift item. The air fryer baking method frees up oven space during busy seasons and reduces bake time, making it easier to produce batches for cookie trays.
Freezing the dough in portions helps prepare ahead for the holidays. Dough can be thawed overnight before pressing into balls and baking fresh in the air fryer. This dough can also be adapted to make other air fryer cookie varieties, offering versatility beyond just this Christmas cookie version.
Ingredients
- ¾ cup butter softened, unsalted
- ¼ cup shortening
- 1 ½ cups sugar
- 2 egg
- 1 ½ teaspoon vanilla extract
- 2 ½ cup all-purpose flour
- 1 instant vanilla pudding mix box
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1/2 cup M&M candy red and green
Instructions
- Cream butter, shortening and sugar in a medium bowl. Mix until they are light and fluffy.
- Add in eggs, vanilla, and instant pudding mix. Mix until thoroughly incorporated.
- In a separate bowl, stir the flour, baking powder, and salt.
- Add the flour mixture to the butter mixture a little at a time. Mix in between additions until all the flour is combined.
- Preheat the air fryer at 350 degrees F for 3 minutes. Make sure you don't preheat with parchment paper inside.
- Use a medium cookie scoop to make tablespoon sized cookie dough balls.
- Flatten the cookie balls slightly with your fingers, pushing them down until they are about 1/2 inch thick.
- Lightly press 7-8 M&M candies on top of each of the balls of dough.
- Once preheated, add a piece of parchment paper to the air fryer basket. Place the cookies on the parchment paper, keeping them about 1 inch apart. Make multiple batches if necessary.
- Bake for 5-8 minutes or until set and golden brown.
- Let the cookies cool in the basket for 5 minutes before transferring them to a wire baking rack to finish cooling.
Notes
- This cookie dough freezes well; divide into portions for convenient thawing and baking batches later.
- To prevent sticking, avoid preheating the air fryer with parchment paper inside and place parchment only just before baking.
- Flatten dough balls uniformly to about a half inch thick for even baking.
- Press M&Ms gently on top to keep them embedded as cookies bake.
