Air Fryer Filipino Pork Barbecue
Description
The recipe starts with pork cubes marinated overnight in a Filipino-style barbecue marinade, which typically includes savory, sweet, and tangy elements. The marinated pork is loaded onto skewers wrapped inside a silver foil packet shaped like a dinner pack. This method limits mess and keeps the pork moist during cooking.
Cooking in the air fryer involves two stages: first, the skewers cook for 20 minutes at 180°C in tightly sealed foil to lock in juices, then the foil is loosened to allow the surface to caramelize during an additional 12 minutes. This process cooks the pork thoroughly while developing some char and texture typical of grilled barbecue.
The finished pork barbecue is enjoyed directly on skewers and embodies a tender, well-marinated, and convenient take on traditional Filipino barbecue made with the ease of an air fryer.
Substituting any sticky barbecue marinade is possible for a variation on flavors that suits personal preference.
Ingredients
Kitchen Gadgets:
- Air Fryer
Filipino Pork Barbecue Ingredients:
- 400 g pork cubes
- 250 ml barbecue marinade Filipino style
Instructions
- Load your cubed pork onto a sheet of silver foil. Add your Filipino barbecue marinade and seal into a foil packet dinner shape.
- Give it a shake so that the marinade has a chance to spread over the pork cubes.
- Place in the fridge overnight to marinade.
- The next day open your silver foil packet and place your pork cubes onto sticks.
- Place the barbecue pork on sticks back into the silver foil, seal it up and load the packet into the air fryer basket.
- Cook for 20 minutes at 180c/360f.
- Loosen the silver foil so that it is like a cooking tray rather than tightly wrapped and cook for a further 12 minutes at the same temperature.
- Eat on sticks and enjoy!
Notes
- Cooking the pork barbecue in foil packets makes prep easier and limits cleanup but increases cooking time.
- You can substitute the Filipino barbecue marinade with other sticky barbecue sauces for different flavor profiles.
- Allow marinating overnight to ensure the pork absorbs full flavor before cooking.
