Air Fryer Flank Steak

This Air Fryer Flank Steak recipe seasons a moderately thick cut with a brown sugar and spice rub then cooks it at 350°F to medium rare. The result is a flavorful steak with a slightly crisped exterior and a tender center, sliced thinly against the grain for tenderness. Using an air fryer provides an alternative to grilling or pan-searing with efficient heat circulation.

Description

The flank steak, about one inch thick, is brought to room temperature to ensure even cooking. A dry rub combining brown sugar, salt, black pepper, onion powder, garlic powder, and paprika is massaged into the meat to add a balance of sweet, savory, and smoky notes.

Cooking in the air fryer at 350°F for four minutes per side produces a steak cooked to medium rare at about 130°F internal temperature. Resting the steak post-cooking improves juiciness and ease of slicing. Cutting against the grain into strips maximizes tenderness and achieves a pleasant texture.

This straightforward method offers a way to prepare flank steak with a caramelized exterior and tender interior, suitable for quick dinners or meal prep.

Ingredients

Servings
  • 1 lb flank steak look for one that is about an inch thick
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper fresh cracked
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika standard not smoked

Instructions

  1. Take the flank steak out about 30 minutes prior to cooking to bring it to room temperature. Prepare the dry rub by mixing the brown sugar, salt, pepper, onion powder, garlic powder, and paprika in a small bowl.
  2. Preheat the air fryer to 350F. Take the flank steak and gently tenderize it on both sides using a meat tenderizer. Rub the dry rub into the flank steak with your hands. Be sure to rub it in on all sides.
  3. Place the steak in the air fryer basket and air fry at 350F for 4 minutes, flip the steak and air fry for another 4 minutes. Check the internal temp of the steak (I like 130F for a medium rare flank steak). Cook for longer if needed.
  4. Place the cooked steak on a cutting board and allow it to rest for at least 5 minutes. Determine the grain of the steak and slice the steak into strips against the grain.
