Description
This Air Fryer Gammon recipe involves cooking a 1.3 kg smoked gammon joint slowly in an air fryer wrapped in foil, which helps retain moisture and ensures even cooking. After an hour at 170°C, the gammon is scored and coated with a vibrant glaze made from cranberry sauce, cranberry juice, and wholegrain mustard. The gammon then returns to the air fryer uncovered at 200°C for 10 minutes to develop a glazed, slightly caramelized crust.
The texture of the gammon is tender and juicy inside, with a tangy, subtly sweet, and mildly spicy outer layer from the glaze. The air fryer method reduces cooking time compared to traditional roasting and requires no basting, simplifying preparation while delivering satisfying flavor and texture.

Ingredients
- 1.3 kg smoked gammon joint
- 125 g cranberry sauce
- 50 ml cranberry juice
- 1 tablespoon wholegrain mustard
Instructions
- Preheat your air fryer to 170°C.
- Put 1.3 kg Smoked gammon joint onto a large sheet of foil and loosely wrap.
- Carefully place the wrapped gammon into the preheated air fryer. Cook at 170°C/340°F for 60 minutes.
- Put 125 g Cranberry sauce, 50 ml Cranberry juice and 1 tablespoon Wholegrain mustard into a bowl. Mix well.
- Remove the cooked gammon form the air fryer and cut off the casing.
- Using a sharp knife, score the gammon in a diamond pattern.
- Pour the cranberry glaze over the scores in the gammon.
- Return the coated gammon to the air fryer with the foil left open.
- Cook at 200°C/400°F for 10 minutes.
- Once cooked, remove from the air fryer and leave to stand for 10 minutes before carving.
Notes
- Bring gammon close to room temperature before cooking to ensure even heat penetration.
- Preheat the air fryer to help cook the gammon evenly throughout.
- Let the cooked gammon rest for 10 minutes before carving to retain juices.
- Soak the gammon in water for 30 minutes beforehand to reduce saltiness if desired.
