Air Fryer Gammon

Report
Air Fryer Gammon is a tender smoked gammon joint cooked in an air fryer, then glazed with a tangy mixture of cranberry sauce, cranberry juice, and wholegrain mustard. The gammon is first cooked wrapped in foil at a moderate temperature, then scored and coated with a flavorful cranberry glaze before finishing with a higher heat for a caramelized glaze. This method delivers juicy meat with a slightly crisped, flavorful exterior, making it a practical choice for a convenient roast.

Description

This Air Fryer Gammon recipe involves cooking a 1.3 kg smoked gammon joint slowly in an air fryer wrapped in foil, which helps retain moisture and ensures even cooking. After an hour at 170°C, the gammon is scored and coated with a vibrant glaze made from cranberry sauce, cranberry juice, and wholegrain mustard. The gammon then returns to the air fryer uncovered at 200°C for 10 minutes to develop a glazed, slightly caramelized crust.

The texture of the gammon is tender and juicy inside, with a tangy, subtly sweet, and mildly spicy outer layer from the glaze. The air fryer method reduces cooking time compared to traditional roasting and requires no basting, simplifying preparation while delivering satisfying flavor and texture.

Remove the casing before scoring and glazing to allow the glaze to fully penetrate. Letting the gammon rest for 10 minutes after cooking redistributes juices for better slicing. This gammon works well sliced for sandwiches, cold platters, or served warm as a main dish paired with seasonal sides.

For a less salty result, soak the gammon in water for 30 minutes before cooking. Ensure the air fryer is preheated and allow the gammon to come close to room temperature before cooking, which promotes even cooking. The glaze is optional if you prefer a simpler approach.
