Description

The Air Fryer Gammon Joint Dinner features a 1 kg unsmoked gammon joint seasoned with a blend of French mustard, garlic puree, extra virgin olive oil, and dried herbs including oregano, parsley, and thyme. The gammon surface is scored to allow the marinade to penetrate and then air-fried fat side down initially. While it cooks, root vegetables such as rutabaga, baby carrots, parsnips, and potatoes are peeled, diced, and seasoned, then added around the meat for cooking.

The air fryer method cooks the gammon evenly while roasting the vegetables until tender and golden, letting their natural sweetness develop alongside the savory meat. The mustard and herb coating adds bright, aromatic notes that complement the gammon’s richness.

  • 1 kg gammon unsmoked, joint
  • 1 rutabaga medium; aka swede
  • 500 g carrot baby
  • 500 g parsnips bag
  • 3 potato medium, white
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp mustard French
  • 1 Tsp Garlic puree
  • 1 Tbsp oregano
  • 1 Tbsp parsley
  • 1 Tbsp thyme
  • salt
  • black pepper

Instructions

  1. Load into a little ramekin (or similar) your mustard, half the olive oil, and the garlic and mix with a spoon. Score the flesh side of the gammon joint and then brush the marinade over the gammon making sure it gets into the gaps.
  2. Load the gammon into the air fryer fat side down and air fry for 20 minutes at 160c/320f.
  3. Whilst the air fryer is on, peel and dice your potatoes into roasties, peel and slice your parsnips into fries, peel and dice your swede, and clean your baby carrots. Load into a bowl together with the rest of the olive oil and the seasonings and mix well with your hands.
  4. When the air fryer beeps, turn the gammon over and then feed all the potatoes and veggies into the gaps around the gammon.
  5. Air fry for a further 30 minutes at the same temperature.
  6. When the air fryer beeps, remove the gammon, and let it rest for a couple of minutes. Then slice the gammon and serve with your sides.

  • Turn the gammon during cooking and add vegetables around it in the air fryer to maximize space and flavor mingling.
