Air Fryer Lemon Squares

Air Fryer Lemon Squares present a tangy lemon custard filling set atop a buttery, golden crust baked in an air fryer. The crust incorporates lemon zest for added brightness and is lightly crisped before adding the smooth filling. The filling is made from eggs, sugar, flour, lemon juice, and vanilla, yielding a softly set, slightly jiggly texture when warm that firms as it cools. These bars are dusted with powdered sugar before serving and are a compact citrus dessert option.

Description

Air Fryer Lemon Squares start with a crust made from room-temperature butter, sugar, all-purpose flour, and lemon zest combined and pressed into a 7-inch pan suitable for an air fryer. The crust is baked at 320°F in the air fryer until a light golden color appears. The filling is prepared by whisking eggs, sugar, flour, vanilla extract, and fresh lemon juice until smooth. This mixture is poured over the prebaked crust and cooked again in the air fryer at the same temperature until just set but still slightly jiggly in the center, which firms up upon cooling.

The lemon zest in the crust and fresh lemon juice in the filling provide a bright, fresh citrus flavor that distinguishes these bars. The use of the air fryer allows for a shorter baking time and can create a tender crust without overbaking. After baking, the bars are cooled on a rack, refrigerated for several hours, and dusted with powdered sugar before slicing.

These lemon squares serve well as a refreshing dessert or snack portioned into small squares, with a balance of sweet and tart notes and a smooth, creamy filling contrasting the crisp crust.

Handling the crust properly—pressing it evenly and using fresh lemon components—ensures optimal texture and flavor. Making sure the bars cool fully and chill maintains their shape and enhances the lemon flavor.

Ingredients

Servings

Crust:

  • 1 cup butter room temperature, unsalted
  • 1/2 cup white sugar
  • 2 cups all-purpose flour
  • 1 teaspoon lemon zest

Filling:

  • 4 egg room temperature
  • 1 1/2 cup white sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup lemon juice
  • 1 teaspoon vanilla extract

Instructions

Crust:

  1. In a large bowl mix the butter, flour, lemon zest, and sugar. Once smooth and fully combined, press into a 7-inch pan that would fit in your air fryer.
  2. Transfer the pan to the air fryer and cook for 7-8 minutes at 320 degrees F until golden brown, after that remove it and set it aside.

Filling:

  1. In a large bowl mix together the eggs, sugar, flour, vanilla, and lemon juice whisk until smooth.
  2. Pour the filling over the baked crust and air fry at 320 degrees F, for 12-14 minutes, or until set.
  3. The bars will harden more as they cool.
  4. Remove from the air fryer and cool on a wire rack. After that refrigerate for a few hours.
  5. Dust with powdered sugar, slice and serve.

Notes

  • Always use fresh lemon juice and zest to maintain bright, fresh citrus flavor.
  • Allow ingredients to come to room temperature for smoother mixing and even cooking.
  • The lemon squares are ready when edges are lightly golden and the center is set but still slightly jiggly; it will firm upon cooling.
  • Use an air fryer-safe glass baking dish for even baking and minimal impact on flavor.
  • Spray the pan lightly with oil before lining with parchment paper to keep it secure while pressing the crust.
  • Press the crust evenly with the bottom of a heavy glass for a smooth base.
