Air Fryer Meatloaf
Description
The meatloaf batter combines lean ground beef with a mixture of quick oats, Worcestershire sauce, onion powder, Italian seasoning, mustard powder, salt, and pepper, bound by a beaten egg. The ingredients are gently mixed to maintain tenderness. Divided into two equal loaves approximately 7 by 4 inches, they cook in a sprayed air fryer basket preheated to 380°F. The air fryer method allows grease to drip away, resulting in a less greasy loaf.
After the initial 25-minute cook, a glaze made of ketchup, yellow mustard, and brown sugar is brushed onto the loaves, then cooking resumes for an additional 5 minutes to set the glaze and develop a slightly caramelized surface. The internal temperature should reach 165°F for safety. Resting five minutes before slicing helps juices redistribute, yielding slices that hold together well.
The recipe makes two mini meatloaves suitable for most 6-quart air fryers; smaller models may require separate batches. Options include using mini loaf pans or silicone liners for easier cleanup. For gluten-free diets, substitute gluten-free oats and Worcestershire sauce. Leftovers store well refrigerated up to three days.
Mix ingredients gently to avoid tough meatloaf; beat the egg first, whisk in seasonings, then add beef and combine carefully.Lightly spray the air fryer basket with a high smoke point oil like avocado oil or use a silicone liner for easy cleanup.Cooking directly in the basket lets fat drain; mini loaf pans can be used if preferred.Apply the glaze near the end of cooking to prevent burning and allow it to set during the last 5 minutes. The recipe yields two mini loaves fitting a 6-quart air fryer; smaller air fryers may require batch cooking.Check doneness with a digital meat thermometer to reach an internal temperature of 165°F.Let the meatloaf rest 5 minutes before slicing to retain juices.Use gluten-free oats and Worcestershire sauce to make it gluten-free.Store leftovers in airtight containers in the fridge for up to three days.
Ingredients
Meatloaf
- 1 egg large
- ¼ cup quick oats gluten-free if needed
- 2 tablespoons Worcestershire sauce gluten-free if needed
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon mustard powder dried
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 pound ground beef lean
Glaze
- ¼ cup ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons brown sugar
Instructions
- In a large bowl, beat the egg with a fork
- Add oats, Worcestershire sauce, onion powder, mustard powder, Italian seasoning, salt and pepper. Whisk to combine.
- Add the ground beef and use your hands to combine the ingredients.
- Divide the meat mixture in half. Form each half into an equally sized loaf shape, about 7" by 4"
- Spray the air fryer basket lightly with cooking spray. Preheat the air fryer to 380
- Place the meatloaves in the air fryer basket, spaced so they aren't touching
- Cook 25 minutes
- While the meatloaf is cooking, combine the glaze ingredients in a small bowl and set aside.
- Brush glaze over the outside of both meatloaves & cook a further 5 minutes or until the internal temperature reaches 165°
Notes
- Beat the egg and mix in all seasonings thoroughly before combining with ground beef to avoid overmixing the meat.
- Spray the air fryer basket lightly with an oil that has a high smoke point, such as avocado oil, or use a silicone liner.
- Cooking in the air fryer basket allows fat to drain; mini loaf pans can be used as an alternative.
- Add the glaze near the end of cooking and cook an additional 5 minutes to let it set without burning.
- This recipe makes two mini meatloaves that fit a 6-quart air fryer; smaller units may require cooking in two batches.
- Use a meat thermometer to ensure internal temperature reaches 165°F for safe consumption.
- Allow meatloaf to rest 5 minutes after cooking before slicing.
- Replace oats and Worcestershire sauce with gluten-free versions if needed.
- Store leftover meatloaf in an airtight container in the refrigerator for up to three days.
