This Air Fryer Meatloaf recipe uses a blend of ground meats with aromatics and classic seasonings to create moist, flavorful mini meatloaves cooked quickly in an air fryer. Finely minced sautéed onions add sweetness and moisture, while breadcrumbs and egg bind the loaf. Ketchup and Worcestershire sauce enrich the taste. The air fryer method yields a browned exterior with a tender interior, finished with a ketchup topping added late for glossy moisture.

Description

The preparation starts by sautéing finely minced yellow onion in neutral cooking oil until fragrant and soft, which builds flavor and sweat moisture into the meat mixture rather than adding raw onion taste. A mixture of ground pork, beef, and veal is combined with egg, milk, two tablespoons of ketchup, Worcestershire sauce, breadcrumbs, salt, pepper, and the sautéed onions.

The meat mixture is formed into two small loaves placed on parchment in the air fryer tray. Precooking involves air frying at 325°F to form a crust and cook through, followed by a topping of additional ketchup for moisture and glaze before finishing cooking. Using an instant-read thermometer to check for an internal temperature of 160°F ensures safe doneness without overcooking.

The air fryer method shortens cooking time compared to traditional ovens and reduces the need for added fats while still producing browned exterior notes. The final meatloaf rests before slicing to retain juices. This method offers a practical way to prepare classic meatloaf with familiar flavors and texture.

The recipe is adaptable to use just beef, pork, or turkey and can accommodate gluten-free breadcrumbs. Aluminum foil lining is not recommended as it can cause sticking and excessive heat.

  • ½ onion yellow; finely minced
  • 2 tsp neutral cooking oil generic cooking oil
  • 1 lb meatloaf mixture I used a mix of ground pork, beef and veal, but you can use either just beef or just pork and beef
  • 1 egg
  • 2 tbsp milk
  • ¼ cup ketchup separated
  • 1 tbsp Worcestershire sauce
  • ¼ cup bread crumbs
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Heat oil over medium-low heat in a small skillet and saute onion until soft and fragrant - 4-5 minutes
  2. Pour meatloaf mix, egg, milk, 2 tbsp ketchup, worcestershire sauce, bread crumbs, salt, pepper and sauted onions into a large mixing bowl. Mix together until the ingredients are evenly combined.
  3. Form mixture into 2 small loaves and place in the air fryer tray on an air fryer liner or a sheet of parchment paper.
  4. Preheat air fryer to 325F. Place meatloafs in the preheated air fryer on the parchment paper. 
  5. Cook at 325F for 20 minutes. Remove from the air fryer and top each meatloaf with 1 tbsp of ketchup. Continue to cook at 325F for an additional 7 minutes. ** Cooking times may vary depending on your air fryer brand. I recommend using an instant read thermometer to test for an internal temperature of 160F. 
  6. Remove from the oven and allow to rest for 5 minutes before slicing and serving

Notes

  • Ground beef, pork, or turkey can be used instead of the mixed meatloaf blend.
  • Gluten-free breadcrumbs are a suitable substitute for standard breadcrumbs.
  • Avoid lining the air fryer basket with aluminum foil to prevent sticking and overheating issues.
  • Check the internal temperature with a thermometer to ensure the meatloaf reaches 160°F for safe consumption.
