Ingredients
- 12 spring roll wrapper
- 3 banana ripe
- 2 Tablespoons peanut butter
- 3 Tablespoons water
- 3 Tablespoons peanut butter melted
Instructions
- Preheat Air Fryer to 350F / 180C.
- Separate wrappers and lay one onto a plate.
- Roughly mash bananas until smooth and then stir in the 2 tablespoons of peanut butter.
- Place about 1 ½ tablespoons of banana filling into each wrapper and fold the sizes and then roll the spring roll tightly. Dip your finger in the water and pat it on the edge to seal. You really want the wrappers to seal, or they will burst.
- Repeat until you have no more wrappers.
- Place in a single layer in an air fryer (you can spray with some cooking spray to help them crisp up more Ifyou prefer but this optional) and air fry for 6-8 minutes. Check at the 6 minute mark and then check every minute after until you see golden brown. If you cook them too long the bananas might start bursting out the sides.
- Remove and drizzle with melted peanut butter, or serve it on the side for dipping them.
To cook on stove top
- Heat about an inch of oil in a medium skillet over high heat.
- Cook the spring rolls for 1-2 minutes per each side until they are golden crispy.
- Drain on kitchen paper towels before serving.

- Add extra peanut butter inside if a richer filling is desired, but avoid overfilling to keep the rolls sealed properly.
- Bananas can be mashed to a smooth or chunky consistency depending on texture preference or cut into pieces instead.
