Air Fryer Peanut Butter Banana Spring Rolls

Air Fryer Peanut Butter Banana Spring Rolls combine mashed ripe bananas with peanut butter, wrapped in spring roll pastry and air-fried until golden brown. The filling balances sweetness and richness from the peanut butter, while the crisp wrapper adds a pleasant crunch. These spring rolls offer a warm, slightly gooey texture inside with a light crisp exterior, making them a tasty snack or dessert option. Melting additional peanut butter for drizzling enhances the flavor and adds a creamy finish.

Description

Air Fryer Peanut Butter Banana Spring Rolls are made by mashing ripe bananas and mixing them with peanut butter, then folding the mixture inside spring roll wrappers sealed carefully with water. Air frying at 350°F crisps the wrappers to a golden color while gently warming the filling. The bananas soften and meld with the peanut butter, creating a creamy interior that contrasts with the crisp outer layer. Optional drizzled melted peanut butter complements the sweet and nutty filling.

The recipe includes an alternative stove-top frying method, but air frying reduces added oil and results in a lighter texture. Proper sealing of the wrappers prevents bursting during cooking and keeps the filling intact. These spring rolls serve well as a snack or dessert, and pairing them with ice cream can turn them into an indulgent treat.

Adjusting the amount of peanut butter inside affects the richness, and the banana can be mashed smooth or left with texture depending on preference. Avoid overfilling to ensure the spring rolls close securely. Cooking time should be monitored to prevent the bananas from oozing out due to overheating.

Ingredients

Servings
  • 12 spring roll wrapper
  • 3 banana ripe
  • 2 Tablespoons peanut butter
  • 3 Tablespoons water
  • 3 Tablespoons peanut butter melted

Instructions

  1. Preheat Air Fryer to 350F / 180C.
  2. Separate wrappers and lay one onto a plate.
  3. Roughly mash bananas until smooth and then stir in the 2 tablespoons of peanut butter.
  4. Place about 1 ½ tablespoons of banana filling into each wrapper and fold the sizes and then roll the spring roll tightly. Dip your finger in the water and pat it on the edge to seal. You really want the wrappers to seal, or they will burst.
  5. Repeat until you have no more wrappers.
  6. Place in a single layer in an air fryer (you can spray with some cooking spray to help them crisp up more Ifyou prefer but this optional) and air fry for 6-8 minutes. Check at the 6 minute mark and then check every minute after until you see golden brown. If you cook them too long the bananas might start bursting out the sides.
  7. Remove and drizzle with melted peanut butter, or serve it on the side for dipping them.

To cook on stove top

  1. Heat about an inch of oil in a medium skillet over high heat.
  2. Cook the spring rolls for 1-2 minutes per each side until they are golden crispy.
  3. Drain on kitchen paper towels before serving.

Notes

  • Add extra peanut butter inside if a richer filling is desired, but avoid overfilling to keep the rolls sealed properly.
  • Bananas can be mashed to a smooth or chunky consistency depending on texture preference or cut into pieces instead.
  • Seal wrappers well using water on the edges to prevent bursting during cooking; place seam side down while cooking.
  • Optionally serve with melted peanut butter drizzled on top or as a dipping sauce for extra flavor.
  • These spring rolls pair well with ice cream for a dessert variation.
  • There are about 3 Blue Plan SmartPoints per serving.
