Air Fryer Pizookie
Description
This recipe starts by creaming butter with brown and white sugars to develop a soft, sweet base, then incorporates egg and vanilla for moisture and flavor. Flour, baking soda, and salt are mixed separately before being blended in, preserving the cookie's tender crumb. Semi-sweet chocolate chips add rich pockets of melted chocolate throughout the dough. The dough is pressed about an inch thick into an aluminum foil pan shaped to fit the air fryer, ensuring even cooking and ease of removal.
Baking in the air fryer at 350°F allows the cookie to cook quickly with a slightly crisp edge and soft center, similar to a pizookie served warm in restaurants. Leftover dough can be used for smaller cookies. The dessert is versatile for serving with ice cream or toppings like caramel or crushed cookies.
Storing leftovers tightly covered in the refrigerator keeps the pizookie fresh for up to two days. Gentle reheating in the air fryer restores warmth and texture without overcooking.
Ingredients
- 1 tick butter 113g, softened
- 3/4 cup light brown sugar 150g, or dark brown sugar, packed
- 1/4 cup white sugar 50g
- 1 egg room temperature
- 1 teaspoon vanilla extract
- 1 3/4 cup all-purpose flour 220 g
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips or chunks
Instructions
- In the bowl of a stand mixer fitted with a paddle attachment, or a handheld mixer, cream together butter, brown sugar, and white sugar for 5 minutes on medium speed until light and fluffy.
- Once five minutes is over, add in egg and vanilla and mix until combined.
- In a separate bowl, mix flour, baking soda, and salt, and mix until combined. Add these dry ingredients to the butter mixture on low speed, and mix until just combined.
- Add chocolate chips and mix until just combined.
- Model an aluminum foil insert around the base of the air fryer, using two sheets of aluminum foil. Remove foil from the air fryer, then preheat the air fryer for 8-10 minutes at 350F (180C).
- Spray the base of your makeshift foil pan with a little non-stick spray, and press the cookie dough into an even layer into the foil until an inch thick. Depending on how thick you like your pizookie, you may have some dough leftover, perfect for baking extra cookies with !
- Once air fryer has heated, place cookie dough pan into the air fryer and cook for 8-10 minutes. Start checking at 6 minutes, then check every minute after. The top will be golden brown, and the center still gooey but not completely raw (I recommend taking a little spoonful out the center to make sure it's cooked enough before removing it). Mine was done at 8 minutes.
- Let pizookie rest for 1 minute to firm up a little, then top with a big scoop of vanilla ice cream and enjoy. Absolutely delicious!
