- Make thin potato slices using a mandolin or a sharp knife. A mandolin will give you more uniform pieces. Just watch your fingers. A mandolin is super sharp.
- Rinse the potato slices and soak them in a bowl of cold water for at least 30 minutes. This removes excess starch so they become crispier.
- Drain the potatoes and pat dry them properly. Spread them over a paper towel in a single layer, and leave it to air dry for 10 minutes. Dry potato slices give you crispy and crunchy chips.

- Preheat the air fryer for 5 minutes at 350 degrees F / 180 degrees C. Place the potato slices in the air fryer basket without overcrowding.
- Cook for 8 minutes until crispy.
