Description
Air Fryer Potatoes and Sausage combines peeled cubed potatoes seasoned with a mixture of olive oil, minced garlic, lemon juice and zest, oregano, salt, and black pepper. After partially air frying the potatoes, sliced smoked sausage, diced bell pepper, and red onion are added for further cooking, allowing the flavors to meld and the vegetables to soften while the sausage heats through. Grape tomatoes and optional crumbled feta cheese are added near the end for freshness and mild creaminess.
The air fryer crisps the potatoes’ exteriors while keeping them tender inside, and the sausage adds richness and smoky depth. The garlic and lemon brighten the dish, complemented by the herbs. This dish can stand alone as a hearty meal or be served as a flavorful side.
Leftover portions can be refrigerated for up to five days and reheated on the stovetop or microwave as preferred.
Ingredients
- 1 pound potato peeled and cut into 1-inch pieces
- ¾ pound smoked sausage cut in ½-inch slices
- 1 bell pepper diced, red or green
- ½ red onion cut in ½-inch pieces
- ½ cup grape tomatoes
- 1 tablespoon feta cheese optional, crumbled
Seasoning
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon lemon juice fresh
- ½ teaspoon oregano dried
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- 1 teaspoon lemon zest
Instructions
- Preheat the air fryer to 400°F.
- Combine the seasoning ingredients in a small bowl, set aside.
- Toss potatoes with half of the seasoning mix. Add to the air fryer basket and cook 12 minutes.
- Toss the sausage, onion, and bell pepper with the remaining seasoning mix. Open the air fryer and shake the basket. Add the sausage and peppers and cook for 5 minutes.
- Sprinkle with the tomatoes and feta cheese, cook 3 minutes more.
Notes
- Store leftover sausages and potatoes covered in the refrigerator for up to five days.
- Reheat leftovers on the stovetop or in the microwave depending on your preference for best texture.
