Air Fryer Pumpkin Donuts

These Air Fryer Pumpkin Donuts offer a baked alternative to traditional fried donuts with a tender texture enriched by pumpkin puree and pumpkin pie spice. The dough is mixed with baking powder and baking soda to ensure rise, then shaped into rings and air fried for a light crust. A cinnamon-spiced sugar topping melted over with butter completes the donuts, providing warm fall-inspired flavors without deep-frying.

Description

Air Fryer Pumpkin Donuts start with a dough made from flour, sugar, baking powder, baking soda, pumpkin pie spice, salt, butter, and pumpkin puree blended with milk and oil. The dough is kneaded gently until smooth, then portioned into rings resembling classic donuts. They are air fried at 375°F, which crisps the outside while keeping the interior tender and moist.

The donuts are then brushed with melted butter and coated in a mix of sugar and pumpkin pie spice, enhancing the warm, aromatic quality of the dish. This method avoids excess grease common in traditional fried donuts, yet preserves a satisfying texture and flavor.

Ideal as a seasonal treat or breakfast baked good, they pair well with coffee or tea. The recipe can also be adapted to donut holes, offering bite-sized versions without changing the core technique.

Ingredients

Servings
  • 1 ¾ cup flour
  • ¼ cup sugar
  • 3 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup butter
  • ¾ cup pumpkin not pie filling, puree
  • ¼ cup milk 2 tablespoons quantity indicated
  • 2 tablespoons vegetable oil

Topping

  • 2 tablespoons butter melted
  • 1/3 cup sugar
  • 1 tablespoon pumpkin pie spice

Instructions

  1. In a medium bowl stir together the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  2. Cut the butter into small cubes. Then use a pastry blender or two forks to mix the butter into the flour until the mixture resembles coarse sand.
  3. Add the pumpkin puree and ¼ cup of milk to the bowl. Stir until the dough begins to come together and clumps into a ball. If the mixture is too dry and crumbly, add more milk one tablespoon at a time.
  4. Transfer the dough to a lightly floured cutting board and knead until smooth.
  5. Separate the dough into 12 equal pieces. Roll each piece dough into a long tube and connect the ends to form a donut shape.
  6. Preheat the air fryer to 375 degrees F.
  7. Place the donuts in the air fryer basket, making sure they’re not touching. They will expand a little as they cook. You should be able to fit 4-6 donuts in the basket, depending on your air fryer size.
  8. Brush each donut with vegetable oil. Use a pastry brush or a spray bottle of oil to coat the outside. Don't use a commercial spray oil as those contain preservatives which can damage the non stick finish of the basket.
  9. Cook the donuts in the air fryer for 8 minutes, until they are golden brown.
  10. Continue cooking in batches until all the donuts have been cooked.
  11. Let the donuts cool on a wire rack before adding the sugar topping.
  12. To make the topping melt the butter. Then whisk together the sugar and pumpkin pie spice in a small bowl.
  13. Brush each donut with melted butter and dip in the sugar mixture until coated.

Notes

  • You can shape the dough into approximately 36 small balls to make pumpkin donut holes instead of full donuts using this recipe.
  • Ensure the air fryer basket has enough space between donuts to allow for expansion and even cooking.
