Delicious air fryer Pumpkin Muffins. Loaded with leftover cooked pumpkin, oats, bananas, eggs, and yoghurt, it’s the ultimate feel good fall muffin.

Ingredients
- 150 g Cooked Air Fryer Pumpkin
- 2 medium bananas peeled and quartered
- 2 medium eggs
- 175 ml Greek yoghurt
- 120 g Gluten Free Oats
- 2 Tbsp caster sugar
- 1 Tbsp vanilla essence
- 1 Tsp cinnamon
- 1 Tsp ground ginger
- 1 Tsp nutmeg
- 1 Tsp mixed spice
- pumpkin seeds optional

- Ninja Soup Maker
- Silicone Egg Cups

Instructions
- Load everything into the soup maker including your peeled bananas, cracked eggs and yoghurt.
- Then pulse until you have a creamy pumpkin muffin batter.
- Pour the muffin batter into egg cups until ¾ full.
- Then place the egg cups into the air fryer basket.
- Then sprinkle the tops with pumpkin seeds.
- Air fry your simple pumpkin muffins for 8 minutes at 180c/360f before serving.
Notes
- Freeze. You can also follow this air fryer pumpkin muffin recipe and freeze the muffins once cool. Perfect for enjoying pumpkin out of season.
- Seasoning. You can swap the ginger, mixed spice, and nutmeg for 1tbsp of pumpkin spice.
- Flour. You can swap the gluten free oats for oat flour, because once blended it will become oat flour.
