Air Fryer Fruit Scones

Let’s combine 3 ingredient lemon scones with my tweaked bero recipe for scones, to make you the best ever air fryer fruit scones.

Ingredients
- 340 g self raising flour
- 85 g granulated sugar
- 120 ml lemonade
- 120 g Greek yoghurt
- 85 g Sultanas/Raisins
- 1 small egg for egg wash

Instructions
- Place into a bowl the flour, sugar and greek yoghurt and start mixing with a wooden spoon. Add the lemonade and keep mixing and finally mix in the raisins.
- Flour a clean worktop along with a rolling pin and your hands. Then use your floured hands to bring together the mixture into a scone dough.
- Transfer the scone dough to your worktop and knead, then roll out with your rolling pin to 2.5cm/1 inch in height.
- Use a cookie cutter to cut scone circles and then transfer them into the air fryer basket. Roll again to use up all the dough.
- Top the scones with egg wash and then air fry for 14 minutes at 180c/360f.
