Description

These crullers combine butter, sugar, salt, pumpkin pie spice, pumpkin purée, water, and evaporated milk in a saucepan brought to a boil. Flour is stirred in to form a smooth dough pulled from the sides of the pan, then mixed with eggs and vanilla extract. The dough is piped into rings onto prepared parchment paper squares and cooked in the air fryer at 360°F, which helps create a tender yet light texture typical of crullers.

The glaze consists of powdered sugar blended with vanilla, pumpkin pie spice, and milk to create a smooth, flavorful coating that complements the subtle pumpkin and spice notes in the crullers. To make the crullers:

  • ½ cup water
  • ½ cup evaporated milk
  • 6 tbsp butter
  • 2 tsp sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 2 egg large
  • cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 tbsp pumpkin pie spice

To make the vanilla pumpkin spice glaze:

  • 1 ½ cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 3-4 tbsp milk

Instructions

  1. Preheat the Air Fryer to 360F / 182C.
  2. Cut parchment paper into 4-inch squares. Spray each square with cooking spray. Do not skip this step or your crullers will stick!
  3. Add the butter, sugar, salt, pumpkin pie spice, pumpkin purée, water and evaporated milk to a saucepan and bring to a boil.
  4. Then lower the heat to medium and add in the flour. Stir quickly until flour is incorporated and you can see the mixture pulling away from the sides of the saucepan.
  5. Next, transfer the mixture to a stand mixer. Use the paddle attachment and mix on medium speed for 4 mins.
  6. Add the eggs one at a time, and then add the vanilla extract. Continue to mix until combined.
  7. Then transfer the dough to a piping bag that is fitted with a large star tip.
  8. Starting in the middle of each piece of parchment, pipe the dough into a ring shape.
  9. Carefully place the parchment squares with piped crullers inside the air fryer basket, making sure they do not touch (you will need to cook your crullers in batches).
  10. Cook for 15 mins at 360F / 182C. Then transfer the air fried crullers to a cooling rack that is placed on top of a baking tray.
  11. To make the glaze, whisk together the powdered sugar, vanilla extract, pumpkin pie spice and milk in a bowl.
  12. Dip the tops of the cooled crullers into the glaze, then return to the cooling rack until glaze has set.
  13. If desired, sprinkle additional pumpkin pie spice on top of the glaze.

Notes

  • Start with shorter cook times and check doneness, adding more time as needed as air fryer temperatures vary by model.
  • Spray parchment paper well to prevent crullers from sticking in the air fryer basket.
  • Avoid overcrowding the air fryer to ensure even cooking and proper puffing of the crullers.
  • For extra fall flavor, try adding a small amount of maple syrup to the glaze mixture.
