  • 1 zucchini medium
  • 1 yellow squash medium
  • 2 red bell peppers sweet
  • 1 cup mushrooms
  • 1 red onion small
  • 2 tablespoon olive oil
  • ½ lemon juice of
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ tsp black pepper
  • ½ cup Parmesan Cheese grated

Instructions

  1. Cut all of the vegetables into equal bite sized pieces.
  2. Preheat the air fryer to 400° or it's highest setting.
  3. In a large bowl, toss the vegetables with the olive oil, lemon juice, Italian seasoning, garlic powder, salt, and pepper. Stir well to coat.
  4. Put the seasoned vegetables in the air fryer basket in a single layer.
  5. Air fry 10 minutes, shaking the basket halfway through
  6. Sprinkle the parmesan cheese over the vegetables and give it a stir.
  7. Air fry 5 more minutes, or until the vegetables are tender and starting to brown.
  8. Serve hot.
