Air Fryer Shrimp Scampi

Air Fryer Shrimp Scampi cooks jumbo shrimp quickly in an air fryer, then tosses them in a garlic butter sauce with lemon zest and fresh parsley. This recipe delivers shrimp that are pink and opaque, with a buttery, bright flavor from the lemon and garlic. It offers a straightforward way to prepare shrimp with a flavorful sauce without traditional stovetop cooking methods.

Description

Air Fryer Shrimp Scampi features peeled, deveined jumbo shrimp seasoned with olive oil, salt, and pepper, then cooked in an air fryer until just opaque and pink. The shrimp are coated in a garlic butter sauce made by melting butter with minced garlic, then whisking in fresh lemon juice, lemon zest, and chopped parsley. This provides a buttery, citrus-infused finish with herbal notes. The air fryer pairs well with this method by cooking shrimp evenly with minimal fuss and letting the garlic butter sauce enhance their delicate texture.

The shrimp can be served alone or with sides like pasta or rice, complementing the bright, garlicky sauce. The cooking time is short, making this dish suitable for a flavorful seafood option when time is limited. Care is taken not to overcook the shrimp, preserving their tenderness.

  • ¼ cup butter
  • 3 cloves garlic minced
  • lemon zest of 1
  • 1 tablespoon lemon juice fresh
  • 1 tablespoon parsley chopped, fresh
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Preheat air fryer at 400°F for 5 minutes.
  2. Dry your shrimp with paper towels, add them to a bowl, then drizzle olive oil, salt and pepper over the top.
  3. Toss to coat the shrimp, then add them in a single layer into the basket of your preheated air fryer that’s been sprayed with olive oil.
  4. Air Fry for 5-6 minutes or until just cooked. They should be pink and opaque. Depending on the size of your air fryer, you will likely need to do this in batches.
  5. While the shrimp are cooking, add the butter and minced garlic to a microwave safe bowl. Heat in the microwave for 20 seconds or until the garlic is fragrant.

  7. Toss the shrimp in the butter sauce and serve.
