Description
Air Fryer Taquitos start with cooked shredded chicken simmered with taco seasoning and water, then blended with cream cheese, diced jalapeno, and the white part of green onions until melted and creamy. The mixture is spooned onto warmed corn tortillas, sprinkled with Mexican cheese blend, and rolled tightly before being secured with toothpicks. Cooking in the air fryer at high heat crisps the tortillas to a golden brown while keeping the filling moist and flavorful. The jalapenos provide a mild heat contrast to the creamy cheese, and the taco seasoning adds a layer of warm spices. Garnishing with remaining green onions brings freshness and a mild onion bite. Ingredients
- 2 cups chicken or beef, cooked shredded
- 1 tablespoon taco seasoning
- 4 ounces cream cheese
- 1 tablespoon jalapeno pepper diced
- 1 green onion sliced, green and whites divided
- 1 cup Mexican cheese blend shredded
- 8 corn tortillas 6 inches each

Instructions
- Combine chicken, taco seasoning and 3 tablespoons water. Simmer 5 minutes or until water is evaporated.
- Add cream cheese, jalapenos, and the whites of the green onion. Cook until melted and creamy.
- Place tortillas on a plate, top with a damp paper towel and microwave 40 seconds or until warm.
- Divide filling over tortillas and top with 2 tablespoons cheese. Roll tightly and secure with a toothpick.
- Preheat air fryer to 400°F.
- Spray taquitos with cooking spray or brush with oil. Place in a single layer and cook about 6-8 minutes or until crisp.
- Cool 2 minutes before serving. Garnish with remaining green onions and toppings as desired.
