Air Fryer Zucchini is a quick, simple, and wholesome side dish that requires no breading. The basic spices combination adds a lot of flavor to the zucchini. This recipe is vegan, gluten-free, low-carb, and keto-friendly.

Ingredients
- 2 zucchini large, about 1 pound
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt adjust to taste
- 1/4 teaspoon black pepper freshly ground
- Lemon wedges

Instructions
- Trim the edges of zucchini. Then cut into quarters lengthwise. Then lay the quarters flat side down and cut into equal size pieces. (Note: You can do other shapes such as round or semi-circle as well. Time varies depending on the size)
- Transfer to a large bowl. Add olive oil, garlic powder, italian seasoning, freshly ground black pepper, and salt.
- Toss to coat the zucchini with the oil and spices.
Air Fryer Method
- Preheat air fryer to 400°F. Transfer seasoned zucchini to the air fryer basket. Air fry at 390F for 7-9 minutes till it looks nicely roasted and is cooked. Shake once in between at about 5 minutes.
- Transfer to a serving plate, and enjoy the easy side dish.
Oven Method
- Preheat the oven to 425°F and transfer the seasoned zucchini to a baking sheet.
- Roast for 15 to 20 minutes, or until zucchini is golden brown around the edges.

Notes
- Storing: You can refrigerate cooked zucchini in an airtight container in the refrigerator for up to 3 days. It is best not to freeze zucchini as it will get mushy.
- Reheating: To reheat, air fry for 2-3 minutes at 350°F.
