ALICE SPRINGS CHICKEN (OUTBACK COPYCAT)
Description
The Alice Springs Chicken recipe begins by marinating four boneless skinless chicken breasts in a mixture of honey, coarse ground mustard, mayonnaise, and lemon juice. After an hour, the chicken is browned in butter to develop a seared exterior. Sautéed mushrooms are cooked separately and then placed over the chicken along with chopped cooked bacon and shredded Colby Jack cheese.
The assembled chicken is baked at 400°F until the cheese melts and the chicken reaches the safe internal temperature of 165°F. The combination of savory bacon, earthy mushrooms, and creamy, tangy sauce melds into a rich topping. Fresh parsley adds a fresh note at serving.
Reserved sauce is served alongside for dipping or drizzling, complementing the chicken's richness. The recipe yields a hearty, flavorful entrée that pairs well with simple sides to balance the richness.
Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days. Reheat gently to maintain moisture and texture.
Ingredients
For the chicken:
- 4 chicken breast boneless skinless
- 2 tablespoons butter
- 4 Bacon cooked slices
- 1 cup mushroom sliced
- salt to taste
- black pepper to taste
- 2 cups Colby jack cheese shredded
- 1 tablespoon parsley chopped fresh, for garnish
For the sauce:
- ½ cup honey
- ½ cup coarse ground mustard
- ¼ cup mayonnaise
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400F and spray a 9x13 or large baking dish with cooking spray.
- In a small bowl, whisk together the sauce ingredients. Pour half of the sauce over the chicken and marinate in the refrigerator for an hour.
- In a large pan saute the mushrooms in a tablespoon of butter until browned and cooked through. Set aside.
- Add the remaining butter to the pan to melt. Brown the marinated chicken breasts in the butter, cooking for 4-5 minutes per side to sear the chicken.
- Add the seared chicken to the bottom of your baking dish. Spread a spoonful of the sauce over each chicken breast (reserve any remaining sauce for serving), followed by a layer of cooked mushrooms, chopped bacon, and a layer of shredded cheese. Bake in the oven for 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F.
- Garnish the chicken with fresh chopped parsley and serve immediately with the reserved sauce for dipping. Enjoy!
Notes
- Store cooked Alice Springs Chicken in an airtight container in the refrigerator for up to 3-4 days.
