Alice Springs Chicken Recipe (Outback Copycat)

Alice Springs Chicken features boneless, skinless chicken breasts seasoned and seared, then baked with a combination of sautéed mushrooms, chopped bacon, and melted Monterey Jack and cheddar cheeses. A honey mustard sauce, made from mayonnaise, honey, Dijon mustard, and lemon juice, enhances the flavor with a balance of sweet and tangy notes. The result is a richly topped chicken dish with a tender interior and cheesy, savory topping.

Description

The recipe begins by preparing a honey mustard sauce blending mayonnaise, honey, mustard, and fresh lemon juice for a creamy and tangy complement. Chicken breasts are seasoned, browned in a skillet, then topped with sautéed mushrooms, crispy bacon pieces, and a mix of shredded cheeses. Baking finishes the chicken and melts the cheese, creating a harmonious layering of flavors.

This dish pairs well with sides like baked or mashed potatoes and broccoli, or traditional fries for a complete meal. The mushrooms add earthiness while the bacon brings smoky saltiness, balanced by the creamy sauce and cheese topping.

Storage advice includes refrigerating leftovers for up to three days or freezing for up to three months. Using preferred mushroom varieties like button or cremini is flexible. Heating to an internal temperature of 165°F ensures safe consumption. Fresh parsley garnish adds a touch of color and freshness.

Ingredients

Servings
  • cup mayonnaise
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 1 teaspoon lemon juice fresh
  • 4 chicken breast boneless, skinless
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 2 tablespoons butter ¼ stick, unsalted
  • 8 ounces mushrooms sliced
  • 1 tablespoon olive oil
  • 4 lices Bacon chopped into 1-inch pieces, cooked
  • 1 cup Monterey jack cheese shredded
  • 1 cup cheddar cheese shredded
  • parsley optional, for garnish, fresh

Instructions

  1. In a small bowl, whisk the mayonnaise, honey, mustard, and lemon juice together. Set aside.
  2. Season the chicken breasts with salt and pepper to taste and set aside.
  3. Preheat oven to 400°F. In a large oven-proof skillet set over medium-high heat, melt the butter.
  4. Add the mushrooms to the skillet and sauté until browned, about 5-6 minutes. Transfer to a bowl and set aside, then return the skillet to the heat.
  5. Heat the oil until it’s shimmering. Add the chicken breasts in a single layer and brown on both sides for 3-4 minutes. Remove the skillet from the heat.
  6. Drizzle half of the honey mustard sauce over the chicken. Scatter the mushrooms evenly over the chicken, then top it with the bacon and half of the cheese.
  7. Bake for 12 minutes. Sprinkle on the remaining cheese and continue baking for an additional 4-8 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Remove from the oven and garnish with parsley if desired. Serve with reserved sauce on the side for dipping.
