Almond Cookies
Description
The cookies are created by creaming softened unsalted butter with cane sugar until light and fluffy, then incorporating a large egg and almond extract for flavor. Almond flour replaces wheat flour, adding density and nutty taste, along with baking powder and salt for leavening and balance. The dough is portioned into uniform balls topped with almonds and baked until the edges are just browned, indicating doneness without overbaking. Cooling slightly before removal maintains shape and texture.
These almond cookies are suitable for everyday treats or festive occasions. They can be stored in an airtight container at room temperature for several days or frozen for longer storage. Thawing in the refrigerator or at room temperature before serving preserves their texture.
Storing the cookies in the fridge can extend shelf life up to a week, and freezing allows keeping them for up to three months. These tips help maintain the cookies' freshness and flavor over time.
Ingredients
- ½ cup cane sugar
- 6 Tablespoons butter softened, unsalted
- 1 large egg
- 1 teaspoon almond extract
- 2 cups almond flour
- ¼ teaspoon salt
- 1 teaspoon baking powder
- almonds for topping, sliced or whole
Instructions
- Preheat oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar together until light and fluffy (about 2-3 minutes) with a hand mixer or standing mixer. Add egg and almond extract and whisk again until combined.
- Add almond flour, baking powder and salt to wet ingredients and stir using a spoon until just combined.
- Scoop the dough into 12 even balls using a cookie scoop or Tablespoon. Top with almonds and press down slightly.
- Bake for 15-18 minutes until edges are slightly browned.
- Let cookies cool for about 5 minutes on baking sheet before transferring to a wire rack to cool completely.
Notes
- Let cookies cool completely before storing to prevent moisture buildup.
- Store in an airtight container at room temperature up to 3-4 days or refrigerate for up to one week.
- Cookies freeze well for up to three months; thaw overnight in the refrigerator or for about an hour at room temperature before eating.
