Almond Flour Muffins

These almond flour muffins are soft, fluffy, and easy! This quick and simple recipe is great for a healthy breakfast, on the go snack, or even dessert. Feel free to add in nuts, fruits, or other ingredients to switch up the flavors!

Ingredients
- ¼ cup pure maple syrup
- ¼ cup oil olive oil or melted coconut oil
- 3 eggs
- 1 tsp vanilla extract
- 2 cups almond flour
- ½ tsp baking soda
- ½ tsp sea salt
- ½ cup chocolate chips

Instructions
- First, preheat the oven to 350 degrees Fahrenheit. Generously spray a muffin pan with nonstick spray.
- In a large bowl, add the maple syrup, oil, eggs, and vanilla. Stir to combine.
- Add in the almond flour, baking soda, and salt. Stir to combine.
- Next, mix in the chocolate chips.
- Fill each muffin cavity about ¾ to the top. This recipe makes 8 to 9 muffins.
- Bake for 15 to 17 minutes, or until a toothpick inserted comes out mostly clean.
- Finally, remove the pan from the oven. Allow the muffins to cool before removing from the pan.

- Do not use almond meal. Use blanched almond flour.
- We recommend using a light tasting oil. Light olive oil or coconut oil are good options. We also like avocado oil.
- Do not overbake. They should look a little soft in the middle.
- Store at room temperature in an airtight container.
