Almond Flour Muffins

These almond flour muffins are soft, fluffy, and easy! This quick and simple recipe is great for a healthy breakfast, on the go snack, or even dessert. Feel free to add in nuts, fruits, or other ingredients to switch up the flavors!

  • ¼ cup pure maple syrup
  • ¼ cup oil olive oil or melted coconut oil
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • ½ tsp baking soda
  • ½ tsp sea salt
  • ½ cup chocolate chips

Instructions

  1. First, preheat the oven to 350 degrees Fahrenheit. Generously spray a muffin pan with nonstick spray.
  2. In a large bowl, add the maple syrup, oil, eggs, and vanilla. Stir to combine.
  3. Add in the almond flour, baking soda, and salt. Stir to combine.
  4. Next, mix in the chocolate chips.
  5. Fill each muffin cavity about ¾ to the top. This recipe makes 8 to 9 muffins.
  6. Bake for 15 to 17 minutes, or until a toothpick inserted comes out mostly clean.
  7. Finally, remove the pan from the oven. Allow the muffins to cool before removing from the pan.

  • Do not use almond meal.  Use blanched almond flour.
  • We recommend using a light tasting oil.  Light olive oil or coconut oil are good options.  We also like avocado oil.
  • Do not overbake.  They should look a little soft in the middle.
