Description
Almond Fresh Peach Bread uses fresh, semi-firm peaches folded into a creamy batter made from butter, sugars, egg, yogurt, and milk, delivering moistness and subtle tang. A mix of all-purpose flour, baking soda, and baking powder leavens the bread to a tender but structured crumb. Ingredients
- 2 medium - large peach fresh, semi firm & ripe
- 1/3 cup butter room temperature
- 1 cup granulated sugar
- 2 1/2 tablespoons brown sugar
- 1 large egg room temperature
- 1/2 cup vanilla yogurt 2 tablespoons, regular
- 2 tablespoons milk (room temperature)
- 1/2 teaspoon vanilla
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 - 1/3 cup almonds sliced
**Room temperature - remove from fridge 30-45 minutes before using.
Instructions
- Pre-heat oven to 350F (180C) and flour and grease a 9x5 inch (22x12 cm) loaf pan.
- In a large bowl beat on medium speed beat the butter and sugars until creamy (about 3 minutes) then add the egg, yogurt, milk and vanilla, beat to combine.
- In a medium bowl whisk together the flour, baking soda and baking powder.
- Add the flour mixture to the creamed mixture and stir with a wooden spoon just until combined. Gently fold in the chopped peaches. Spoon into the prepared loaf pan and top with the sliced almonds. Bake for approximately 35-40 minutes, (test with a toothpick). Let cool completely before slicing. Enjoy!
