Ingredients

  • 2 medium - large peach fresh, semi firm & ripe
  • 1/3 cup butter room temperature
  • 1 cup granulated sugar
  • 2 1/2 tablespoons brown sugar
  • 1 large egg room temperature
  • 1/2 cup vanilla yogurt 2 tablespoons, regular
  • 2 tablespoons milk (room temperature)
  • 1/2 teaspoon vanilla
  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 - 1/3 cup almonds sliced

**Room temperature - remove from fridge 30-45 minutes before using.

Instructions

  1. Pre-heat oven to 350F (180C) and flour and grease a 9x5 inch (22x12 cm)  loaf pan.
  2. In a large bowl beat on medium speed beat the butter and sugars until creamy (about 3 minutes) then add the egg, yogurt, milk and vanilla, beat to combine.
  3. In a medium bowl whisk together the flour, baking soda and baking powder.
  4. Add the flour mixture to the creamed mixture and stir with a wooden spoon just until combined. Gently fold in the chopped peaches.  Spoon into the prepared loaf pan and top with the sliced almonds.  Bake for approximately 35-40 minutes, (test with a toothpick).  Let cool completely before slicing.  Enjoy!
