Almond Joy Bars

Almond Joy Bars are coconut-rich treats combining unsweetened shredded coconut and sweetened condensed coconut milk shaped into bars, each topped with an almond and coated in melted dark chocolate. Once set, they offer a firm bite with a creamy interior and chocolate finish.

Description

These Almond Joy Bars blend fine shredded unsweetened coconut with sweetened condensed coconut milk to create a moist, moldable mixture. Small rectangles of this coconut base are formed and topped with a whole almond, then chilled in the freezer until firm. Dark chocolate chunks melted with coconut oil provide a glossy, smooth coating into which the bars are dipped to fully encase the coconut center.

After coating, the bars are returned to the freezer to harden the chocolate shell. The finished bars have a contrast of textures: the firm, slightly chewy coconut base with the crunchy almond and crisp chocolate exterior. The coconut flavor is enriched by the condensed coconut milk, and the almond adds a nutty center balance. These bars should be allowed to come to near room temperature after removing from the freezer to soften slightly before eating for the best texture.

Ingredients

  • 2 cups coconut unsweetened, fine shredded/desiccated
  • 1 cup sweetened condensed coconut milk or 1 11.25oz can - I used Nature’s Charm
  • 20 almond or roasted and salted, raw
  • ¾ cup dark chocolate chunks dairy-free or chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Combine coconut and condensed milk in a large bowl.
  2. Using a tablespoon or small cookie scoop, scoop coconut mixture, form into rectangular shape and place on a parchment lined baking sheet. I got about 22 bars.
  3. Place 1 almond in the center of each bar. Place baking sheet in the freezer for the bars to harden for at least an hour.
  4. Once bars have hardened, place chocolate and coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each. It shouldn't take longer than 1-2 minutes total for the chocolate to melt.
  5. Dip/coat each bar into the melted chocolate, one at a time. Use a spoon to coat until completely covered. Place chocolate covered candy back on the baking sheet lined with parchment. Repeat until all pieces are coated.
  6. Place bars back into the freezer to let the chocolate harden. Once chocolate has set they're ready to enjoy! They may be a little hard directly from the freezer so let them sit out about 5 minutes before eating.
  7. Store leftovers in the fridge for about 1 week or in the freezer for up to 3 months.
