Almond Joy Cookies

Almond Joy Cookies combine sweetened coconut, chopped almonds, and semi-sweet chocolate chips bound with sweetened condensed milk to form rich, chewy cookies. These cookies are hand-shaped into mounds that bake until golden at the edges. Their texture is chewy and moist with a blend of nutty and chocolate flavors reminiscent of the candy bar.

Description

Almond Joy Cookies mix coconut, almonds, sweetened condensed milk, and chocolate chips to create a sticky dough that holds shape well. The cookies are formed into small mounds, hand-shaped and slightly flattened before baking, which allows them to maintain a soft yet slightly crisp structure around the edges. Baking at a moderate temperature of 325°F ensures even cooking without burning the sugar-rich ingredients.

The combination of coconut and chopped almonds replaces traditional flour-based cookie dough, resulting in a chewy, moist texture with bursts of chocolate flavor throughout. These cookies offer a straightforward and unique alternative to typical chocolate chip cookies, focusing on the texture and richness of the coconut and nuts.

This recipe is suitable as a snack or dessert option that doesn’t require leavening agents or extra binding ingredients.
