Almond Roca Bars

Almond Roca Bars are a buttery, almond-flavored baked bar featuring a tender but slightly crispy texture. The dough combines butter with white and brown sugars, almond extract, and flour, baked in a 9x13 pan until edges are set. Warm chocolate chips are spread over the hot base to melt, then cooled to create a glossy chocolate layer. These bars offer a rich combination of sweet almond and chocolate flavors in a handheld treat.

Description

The almond-flavored bars start with creaming butter and two types of sugar to achieve a balanced sweetness and moist crumb. Adding egg, almond extract, and salt enriches the dough’s flavor and structure. The flour is beat in to form a pliable batter, which is evenly spread into a baking pan. Baking at 350°F until the edges are firm but the center can remain slightly soft results in a chewy texture.

Immediately topping the warm baked base with chocolate chips allows them to melt thoroughly, forming a smooth chocolate layer. Gently spreading the melted chocolate before it sets ensures even coverage. The bars cool to develop a firm but tender bite with distinct almond and chocolate notes that complement each other well.

This recipe is straightforward and reliable for a rich dessert or snack, with a texture between a cookie and a bar. It works well for serving in casual settings or sharing at gatherings.

Ingredients

Servings
  • 1 cup butter 2 sticks
  • 1/2 cup white sugar
  • 1/2 cup brown sugar packed
  • 1 egg
  • 1/4 teaspoon salt
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1 & 1/2 or 2 cups chocolate chips

Instructions

  1. Beat butter with sugars. Add egg, almond, and salt. Beat in flour. Spread in a 9x13 pan. (Wet your fingers if the dough sticks).
  2. Bake at 350 for 13-15 minutes, or until it is set on the edges (and set in the middle, too, if you like them to be a little crispy).
  3. Sprinkle generously with chocolate chips immediately after baking. Let it sit for 10 minutes or so (this is hard.
  4. Sometimes I cheat and stick it back in the still-warm oven, but if you do this only leave it in for about a minute or two, otherwise your chocolate will get all weird on you.)
  5. Spread the chips around when they have melted.
  6. Don't eat all at one time.
