Description
These cookies start by whisking egg whites to soft peaks, incorporating granulated sugar and almond extract for sweetness and characteristic flavor. Folding almond flour into this mixture creates a thick, sticky dough. Shaping the dough into balls and rolling them in powdered sugar forms a sugared crust that adds delicate sweetness and texture after baking.
Pressing each ball lightly before baking gives the cookie its traditional flattened shape, allowing even cooking. Baking at 350° F for 12 to 15 minutes yields cookies that are just set on the edges with soft centers, typical of amaretti. The result is a tender cookie with the nutty aroma and flavor of almonds enhanced by the almond extract.
Ingredients
- 5 egg room temperature, white
- 1 tbsp almond extract
- 1 ½ cups granulated sugar
- 5 cups almond flour
- ½ cup powdered sugar for dusting
Instructions
- Preheat oven to 350° F
- Whisk egg whites until very soft peaks form (lots of foaming bubbles but not stiff)
- Whisk in almond extract
- Whisk in granulated sugar
- Stir in almond flour and mix JUST until combined...dough should be thick and a bit sticky
- Place powdered sugar in a bowl or tray
- Form dough into small balls, drop them in powdered sugar and roll them around to fully coat
- Place on parchment paper lined baking sheet (or silicone mat) a couple inches apart
- Take 3 fingers and gently press the ball down forming a cookie
- Bake for 12-15 minutes
