This amazing banana crunch french toast dish has become a weekend favorite in our household. Crispy granola and sweet bananas elevates a traditional french toast and is incredibly easy to make a gourmet breakfast at home.

Ingredients
- 1 banana peeled and thinly sliced, plus extra for serving
- 1 cup granola plus extra for serving
- ½ cup milk any type you prefer
- 3 large eggs
- 1 tsp ground cinnamon
- 4 lices white bread
- butter or oil for cooking
- maple syrup, powdered sugar, whipped cream, or honey optional for serving
Instructions
- In a large bowl combine and mix together banana slices, granola, eggs, milk, and ground cinnamon
- Preheat a non-stick skillet over medium heat and add a small amount of butter or oil to coat the surface.
- Dip a slice of bread into the egg mixture, ensuring both sides are fully coated. Let any excess batter drip off.
- When skillet is very hot, place the coated bread onto the skillet. Pour about 3 tbsp of the batter (including banana slices and granola) over the top of the bread slice. Cook about 2 minutes on each side, or until golden brown and crispy.
- Repeat the coating and cooking process with the remaining slices of bread.
- Once all the french toast slices are cooked, serve them warm, topped with fresh banana slices and additional granola. Drizzle with maple syrup, honey, or a sprinkle of powered sugar if desired.
