Amazing Orange Cake
Description
Amazing Orange Cake starts with creaming butter and granulated sugar, then blending in eggs, orange zest, and orange juice to impart fresh citrus flavor. A dry mix of all-purpose flour, baking powder, and salt is combined into the wet ingredients to form the batter.
The batter is baked in a greased loaf pan at 350°F for about 55-60 minutes until a toothpick comes out clean. Once cooled, it’s glazed with an orange icing that intensifies the citrus notes and adds a glossy finish.
This cake suits a sweet breakfast treat or an afternoon snack with tea, showcasing bright orange flavors balanced by buttery richness and a moist crumb.
For best results, use flavorful fresh oranges for zest and juice, or substitute with zest from fresh orange and juice from carton if fresh oranges aren't available.
Ingredients
- 1/2 cup butter
- 1 cup granulated sugar
- 2 large egg
- 3 tablespoons orange zest
- 1/2 cup orange juice
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- orange icing glaze
Instructions
- Preheat your oven to 350 °F. Grease a standard loaf pan ( 9x5x3 inches approximately) and set aside.
- In a large mixing bowl, beat together the butter and sugar until creamy and smooth. Beat in the eggs, one at at a time until fully combined. Mix in the orange zest and juice until combined.
- In a separate bowl, whisk together the flour, baking powder and salt. Add into the butter mixture and stir until mixed in well.
- Spoon into the prepared loaf pan, smoothing out the top. Bake for 55-60 minutes or until a cake tester or toothpick inserted into the middle comes out clean. Remove from the oven and let cool until you can touch the pan safely. Turn out onto a rack to cool completely.
