Amazing Orange Cake

This orange cake features fresh orange zest and juice incorporated into a buttery, sugar-sweetened batter, creating a moist, flavorful loaf. The cake is leavened with baking powder for a tender crumb and finished with an orange glaze that adds sweetness and brightness. It delivers a pronounced orange flavor throughout and a soft, fine texture.

Description

Amazing Orange Cake starts with creaming butter and granulated sugar, then blending in eggs, orange zest, and orange juice to impart fresh citrus flavor. A dry mix of all-purpose flour, baking powder, and salt is combined into the wet ingredients to form the batter.

The batter is baked in a greased loaf pan at 350°F for about 55-60 minutes until a toothpick comes out clean. Once cooled, it’s glazed with an orange icing that intensifies the citrus notes and adds a glossy finish.

This cake suits a sweet breakfast treat or an afternoon snack with tea, showcasing bright orange flavors balanced by buttery richness and a moist crumb.

For best results, use flavorful fresh oranges for zest and juice, or substitute with zest from fresh orange and juice from carton if fresh oranges aren't available.

Ingredients

Servings
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 large egg
  • 3 tablespoons orange zest
  • 1/2 cup orange juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • orange icing glaze

Instructions

  1. Preheat your oven to 350 °F. Grease a standard loaf pan ( 9x5x3 inches approximately) and set aside.
  2. In a large mixing bowl, beat together the butter and sugar until creamy and smooth. Beat in the eggs, one at at a time until fully combined. Mix in the orange zest and juice until combined.
  3. In a separate bowl, whisk together the flour, baking powder and salt. Add into the butter mixture and stir until mixed in well.
  4. Spoon into the prepared loaf pan, smoothing out the top. Bake for 55-60 minutes or until a cake tester or toothpick inserted into the middle comes out clean. Remove from the oven and let cool until you can touch the pan safely. Turn out onto a rack to cool completely.
  5. Glaze with my Orange Icing Glaze when fully cooled.

Notes

  • Choose flavorful fresh oranges for zest and juice to maximize citrus taste.
  • If fresh juice is unavailable, use fresh zest with orange juice from a carton as an alternative.
  • Cool the cake thoroughly before glazing for the best texture and appearance.
