Amazing Spicy Potato Salad
Description
The Amazing Spicy Potato Salad features thinly sliced potatoes that are blanched briefly until just tender, then cooled to achieve a slightly crisp bite without being mushy. The dressing blends spicy chili oil, light soy sauce, toasted sesame oil, and vinegar, rounded out by cumin powder for a warm, earthy note. Garlic and scallions are fried in oil to release their aroma before combining with the rest of the sauce ingredients, adding depth to the salad. Fresh coriander added just before serving gives the dish a bright herbal contrast.
The salad is served cold or at room temperature, making it a refreshing accompaniment to grilled or fried dishes. The interplay of spice and acidity with the mild potato base offers a distinctive flavor profile that works well alongside simple rice or other main courses needing a flavorful side.
Soaking the potato slices and subsequently cooling them after blanching helps maintain their texture and prevents them from sticking together. Mixing the salad just before serving ensures the flavors remain vibrant and the potatoes retain their firmness.
