Description
The salad begins by whipping heavy cream with powdered sugar and vanilla extract until thickened. Sour cream is folded in to add a tangy creaminess. Separately, well-drained canned mandarin oranges, pineapple tidbits, and maraschino cherries are combined with shredded sweetened coconut and mini marshmallows, which provide chewiness and sweetness.
Mixing the fruit and marshmallow mixture with the creamy whipped blend creates a chilled dessert or side dish with a balance of sweet, tart, and creamy elements. The shredded coconut offers texture and tropical notes, while the mini marshmallows add a light chew and sweetness. The salad is refrigerated for at least an hour to allow flavors to integrate and the texture to firm up before serving.
Optional rainbow-colored marshmallows can brighten flavor and appearance, and chopped nuts such as pecans or walnuts can be added for crunch. The salad keeps well in an airtight container for up to three days but is not recommended for freezing, as texture changes may occur. Preparing the salad several hours before serving improves the overall flavor and mouthfeel.
Ingredients
- ¾ cups heavy cream
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
- ½ cup sour cream
- 11 oz mandarin oranges well drained, canned
- 10 oz maraschino cherries well drained and without stems, ¾ cup
- 1 8 oz pineapple tidbits well drained, canned
- 1 ½ cups coconut sweetened shredded
- 4 cups mini marshmallows (see note)
Instructions
- Combine heavy cream, powdered sugar, and vanilla extract in a large bowl. Use an electric mixer to beat until mixture is thick, billowy, and the consistency of Cool Whip.
- Use a spatula to fold in sour cream until completely combined.
- In a separate bowl, stir together oranges, cherries, pineapple, coconut, and mini marshmallows.
- Add whipped cream/sour cream mixture and stir until completely combined.
- Cover bowl and chill in refrigerator for at least 1 hour before serving.
Notes
- Use rainbow or fruit-flavored mini marshmallows for a highlight of tropical flavor, or classic white marshmallows as a substitute.
- Add ¾ cup coarsely chopped nuts such as pecans or walnuts for extra texture and flavor if desired.
- Make the salad 1 to 24 hours before serving to develop best flavor and texture.
- Store ambrosia salad in an airtight container in the refrigerator for up to 3 days.
- Freezing is not recommended as it can affect texture negatively.
