Amish Apple Fritter Bread Recipe
Description
The Amish Apple Fritter Bread recipe combines chopped apples tossed in cinnamon and sugar layered inside a butter, sugar, egg, and vanilla batter. The flour, baking soda, baking powder, and salt form the dry ingredient base, while buttermilk adds moisture and tenderness to the batter. Half of the batter is spread in a greased loaf pan, topped with half the apple mixture, then layered again with the remaining batter and apples.
A streusel topping of brown sugar and cinnamon is added, creating a sweet, crunchy crust during baking at 350 degrees F. The result is a tender bread full of warmly spiced apple pieces and a cinnamon-sugar crunch. An optional glaze of powdered sugar and milk can be drizzled after cooling for added sweetness and moisture.
This bread works well sliced for breakfast or snack and can be paired with butter or cream cheese spreads. The recipe provides a comforting apple dessert or sweet bread option that preserves the texture of apples within a soft crumb.
Substitutes like apple pie spice for cinnamon or a milk and vinegar mixture as buttermilk replacements allow flexibility. If the bread browns too quickly, covering with foil prevents overbaking. Cooling fully before slicing helps maintain slice shape and avoids crumbling.
Ingredients
Apple filling
- 2 cups apple peeled, cored and chopped, about 3 apples
- 1 teaspoon cinnamon
- 1 tablespoon white sugar
Bread
- ½ cup butter softened (1 stick, unsalted
- ⅔ cup granulated sugar
- 2 egg
- 1 ½ teaspoons vanilla extract
- 1 ½ cups flour
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup buttermilk
Topping
- ½ cup brown sugar
- 2 teaspoons ground cinnamon
Glaze (optional)
- ½ cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat the oven to 350 degrees F.
- Grease a loaf pan that is at least 8 x 4 x 3 inches with nonstick cooking spray.
- Peel, core and chop the apples.
- Toss the apples with the teaspoon of cinnamon and tablespoon of white sugar. Set aside while you make the bread.
- Use an electric mixer to cream the butter with the white sugar until fluffy. Once it is mixed add the eggs and vanilla mix until just combined.
- In a separate bowl combine the flour, baking soda, baking powder and salt.
- Add the dry ingredients to the mixer and combine. Then pour in the buttermilk and mix until smooth.
- Spread half of the batter in the prepared loaf pan and use a rubber spatula to spread it out. Add half of the apple mixture on top, pressing them down into the layer of batter.
- Spread the remaining bread batter over top of the apples. Top the loaf pan with the remaining apple mixture.
- In a small mixing bowl combine the brown sugar with 2 teaspoons of cinnamon. Spread this streusel mixture on top of the bread.
- Bake the apple bread at 350 degrees F for 60-70 minutes. It is done when toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 15 minutes. Then carefully remove from the pan.
- Optional: When the bread is cool combine the glaze ingredients and stir until smooth. Drizzle the sweet glaze over the loaf of bread.
Notes
- If you lack buttermilk, mix a teaspoon of white vinegar or lemon juice into milk as a substitute.
- Apple pie spice can replace cinnamon in the apple filling and streusel topping.
- Cover the bread with foil if it browns too fast on top during baking.
- Let the bread cool completely before slicing to prevent crumbling and make clean cuts.
