  • 1 small onion chopped
  • 4 medium potatoes peeled and diced
  • 1 can 15 oz corn, drained (or use fresh or frozen corn)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup milk
  • 2 tablespoon butter melted
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (optional for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or casserole dish.
  2. Cook the ground beef: In a large skillet, cook the ground beef over medium heat, breaking it apart with a spoon. Add the chopped onion and cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain excess fat.
  3. Prepare the potato mixture: In a separate pot, cook the diced potatoes in boiling salted water for 8-10 minutes, or until they are just tender but not fully cooked. Drain and set aside.
  4. Assemble the casserole: In a large bowl, combine the cooked ground beef mixture, partially cooked potatoes, corn, sour cream, milk, melted butter, garlic powder, paprika, and half of the shredded cheddar cheese. Stir until well combined. Season with salt and pepper to taste.
  5. Bake the casserole: Transfer the mixture to the prepared baking dish and top with the remaining shredded cheddar cheese.
  6. Bake for 30-35 minutes, or until the casserole is bubbling and the cheese is melted and golden.
  7. Garnish and serve: Remove the casserole from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

  • For added flavor, you can use ground turkey or chicken in place of ground beef.
  • If you prefer a spicier version, add some diced jalapeños or a pinch of cayenne pepper.
  • To make this casserole ahead of time, prepare it up to the baking step and refrigerate. When ready to bake, allow it to sit at room temperature for 15-20 minutes and then bake as instructed.
