Ingredients
- 1 pound elbow macaroni
- 1 cup mayonnaise (real mayonnaise recommended)
- ¼ cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons granulated sugar
- 1 tablespoon celery seed
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup finely chopped onion (red or yellow)
- ½ cup finely chopped celery
- ¼ cup finely chopped green bell pepper
- ¼ cup sweet pickle relish
Instructions
- Cook the macaroni: Cook the macaroni according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Let cool completely.
- Make the dressing: In a large bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, celery seed, salt, and pepper until smooth.
- Combine ingredients: Add the cooled macaroni, celery, onion, green bell pepper, and sweet pickle relish to the dressing. Stir well to coat all the ingredients.
- Chill: Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Serve: Serve chilled.
Notes
- Mayonnaise: Real mayonnaise is recommended for the best flavor and texture. You can use light mayo, but the texture will be different.
- Vinegar: Apple cider vinegar adds a tangy flavor that balances the richness of the mayonnaise. You can adjust the amount to your liking.
- Sweetness: The amount of sugar can also be adjusted to your preference.
- Vegetable Variations: Feel free to add other vegetables to the salad, such as hard-boiled eggs, shredded carrots, or chopped pimentos.
- Make-Ahead: This macaroni salad is best made ahead of time to allow the flavors to develop. It can be stored in the refrigerator for up to 3 days.
