Description
This casserole starts by cooking egg noodles until tender and browning ground beef with chopped onions. The drained meat is mixed in a bowl with cooked noodles, frozen peas, cans of cream of mushroom and cream of chicken soups, and sour cream to create a creamy filling. The mixture is spread into a greased baking dish.
Breadcrumbs tossed with melted butter are sprinkled over the top before covering the dish with foil and baking at 350°F. After 25 minutes covered, the foil is removed to allow the topping to brown during an additional 15-20 minutes. The result is a warm casserole with a creamy interior and a golden, crisp breadcrumb top.
The recipe is flexible with breadcrumbs; leftover hamburger or hot dog buns can be processed into suitable crumbs. This dish is practical for using common staples and frozen vegetables, producing a filling meal that serves a crowd.
Ingredients
- 12 ounces egg noodles
- 2 pounds ground beef
- 1 onion chopped
- 2 cups peas frozen
- 20 ounces cream of mushroom soup
- 20 ounces cream of chicken soup
- 1 cup sour cream
- 2 cups crumbled bread (or panko bread crumbs)
- 3 tablespoons butter melted
Instructions
- Cook the noodles according to the package directions.
- Brown the ground beef along with the onion. Drain the fat off the meat.
- In a large bowl, combine the noodles, beef, peas, soups and sour cream. Pour the mixture into a greased 9x13 (or even a bit larger) greased baking dish.
- In a small bowl, toss the breadcrumbs with the melted butter. Sprinkle the breadcrumbs on top of the casserole. The pan will be very full.
- Cover the casserole with foil and bake the casserole in a 350 degree oven for 25 minutes, then uncover and bake an additional 15-20 minutes, or until is heated through and lightly browned on top.
- Serve immediately.
Notes
- Use leftover bread for breadcrumbs to reduce waste and add texture to the topping.
- This casserole serves well as a hearty family meal with simple ingredients.
