Ancient stale bread recipes tirit / thareed

Turn stale bread Into Kebab! Ancient Turkish “Tirit” is an authentic Turkish / Ottoman recipe from my childhood. “Tirit” or “Thareed” is a dish made by putting toasted or stale bread in broth. We have many different “Tirit” dishes throughout Anatolia. I am going to show one of my childhood “Kastamonu Tiridi”.

For the ground beef topping

  • 400 gr. ground beef
  • 2 medium-size onion
  • 3-4 tbsp olive oil
  • 1 tbsp butter
  • Sal, pepper, and paprika to taste
  • 2 cups water

For the base:

  • 300 gr. stale bread or pide, cut into cube
  • 1 tbsp butter

For the paprika sauce:

  • 1 tsp sweet or hot paprika
  • 2 tbsp butter
  • 2 cups plain fullfat yogurt

Instructions

Preparing Stale Bread Base

  1. For the base, use any stale bread. If your bread is soft or to give extra taste you can toast it.
  2. First cut them into cubes.
  3. Then toast the pieces of bread with some butter until you have some golden spots. Turn off the heat and keep it ready at the side.

Cooking Ground Beef Topping

  1. Meanwhile, make the ground beef topping. Sauté the ground beef in vegetable oil and butter mixture. Make a well in the center and add diced onions.
  2. Add salt, paprika, and black pepper to taste. Continue to sauté for about 4-5 minutes.
  3. Add about 1+1/2 to 2 cups of water, simmer for 2-3 more minutes and turn off.

Assembling The Tirit (Best recipe for stale bread)

  1. What is on my memory besides the delicious taste is, that my mom was serving tirit in a big wide bowl, and we were eating right from there with spoons. It was making us get together at the table just like in Anatolia or even back in Ottoman times how it is served.
  2. First spread the toasted pieces of bread into a serving plate.
  3. Then spread the ground beef base on top of them. Make sure most of the bread pieces are wet with the sauce.
  4. Pour the yogurt sauce over the minced meat sauce and bread base.

Cooking The Paprika Sauce

  1. For the paprika sauce, melt some butter with paprika.
  2. Cook the sauce until a delicious smell comes from the sauce.
  3. Finally, drizzle the hot paprika sauce over the “tirit” and serve hot.
