  • 1 1/4 cups cake flour
  • 1 3/4 cups white sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups egg white
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Make sure your pan, stand mixer, sifter and whisks is clean, dry and grease free, then line only the bottom of a tube pan with parchment paper
  2. Sift the flour, sugar and salt together.
  3. Beat the egg whites to stiff peaks, add in the cream of tartar, vanilla and almond extracts and beat until they're just combined.
  4. Gently fold the dry ingredients into the egg whites then pour into the tube pan.
  5. Place into the oven, then turn it on to 325 degrees and cook for 60 minutes before removing from the oven placing a metal plate over it and flipping the tube pan over to let it cool upside down before removing it.
