Antipasto Salad
Description
Antipasto Salad starts with chopped red leaf and romaine lettuce mixed with jarred roasted red peppers, marinated artichoke hearts, sliced red onion, parsley, kalamata olives, diced pepperoni, salami, provolone cheese, and cherry tomatoes. The salad is tossed with a homemade Italian dressing blending extra virgin olive oil, red wine vinegar, minced garlic, Dijon mustard, sugar, salt, and pepper. This combination delivers layers of bright, savory, and tangy flavors.
The salad works well served chilled alongside crusty bread or as a filling course in an Italian-inspired meal. The varied textures from crisp greens, soft cheese, firm meats, and olives make it satisfying and flavorful.
As the salad uses jarred and fresh ingredients, it comes together quickly. Tossing just before serving helps to keep the lettuce crisp. Pepperoncini peppers served on the side add an optional spicy bite.
Ingredients
Homemade Italian Dressing:
- 6 tablespoons extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 clove garlic minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Salad:
- 8 cups lettuce I used a mix of read leaf and romaine hearts, chopped
- 1 roasted red pepper 7 oz jar, drained and sliced
- 1 artichoke heart 6 oz jar, marinated in oil, chopped
- 1/2 cup red onion thinly sliced
- 1/2 cup parsley leaves
- 1/2 cup kalamata olives halved
- 1/2 cup pepperoni diced
- 1/2 cup salami diced
- 1/2 cup provolone cheese diced
- 1/2 cup cherry tomato quartered, or grape tomato
- pepperoncini pepper
Instructions
- To make the dressing, combine all the ingredients in a blender and process until completely combined and smooth. Alternately, combine in a jar with a tight fitting lid and shake vigorously until combined and smooth.
- In a large bowl, toss together the lettuce, red peppers, artichoke hearts, red onion, parsley, olives, pepperoni, salami, Provolone and tomatoes. Pour the salad dressing over the top and toss to combine. Serve with the pepperoncini peppers.
