Ants Climbing A Tree (Ma Yi Shang Shu)

Ants Climbing A Tree is a noodle dish consisting of glass vermicelli enveloped in a fragrant spicy bean sauce with ground pork. The noodles absorb the seasoned broth and spices, giving a tender yet chewy texture complemented by flavorful, softly cooked minced meat. This dish can be served on its own or paired with steamed rice for a comforting meal.

Description

This version of Ants Climbing A Tree employs glass noodles soaked briefly to soften before combining with a ground pork mixture cooked in a fragrant blend of ginger and spicy fermented bean paste. The dish incorporates chicken stock, soy sauces, and a hint of sugar to create a richly savory and mildly spicy broth that clings to the noodles. The ground pork distributes through the noodles, resembling ants climbing branches, which inspired the dish’s name.

The method uses a quick stir-fry and simmer, allowing the noodles to absorb the flavorful sauce without overcooking. Fresh chopped scallions provide a mild pungency and visual contrast. Ants Climbing A Tree is suited as a standalone noodle dish or as part of a larger meal, pairing well with steamed rice or other lighter dishes.
