Description
This recipe starts by finely chopping Granny Smith apple and mixing it with powdered peanut butter (PB2) combined with creamy peanut butter to achieve a dough-like consistency. Rolled oats, flax seed, chia seed, and cinnamon are folded in for texture and nutrition. Additional water or honey can be added as needed to adjust stickiness for forming.
After chilling briefly in the refrigerator, the mixture is rolled into two-inch balls. These snack balls are rich in protein, fiber, and healthy fats from the peanut butter and seeds, while the apple adds moisture and a touch of natural sweetness. The result is a chewy, mildly spiced snack suitable for on-the-go eating or a quick energy boost.
They keep well refrigerated for about a week and can be frozen for up to three months. Individual portions can be packed in small bags for convenience. The PB2 can be omitted by increasing the creamy peanut butter slightly if preferred.
Ingredients
- 1 apple finely chopped
- ½ cup rolled oats
- ⅓ cup + tablespoons powdered peanut butter PB2 brand
- 2 tablespoons Flax Seed
- 1 tablespoon chia seed
- 1 tsp cinnamon
- 1 ½ cups peanut butter creamy
- 1-3 tsp water optional, if needed for consistency
- 1-3 tsp honey optional, if needed for consistency
Instructions
- Dice granny smith apple. The smaller the better.
- In a large bowl, combine PB2 with creamy peanut butter. Stir until mixed thoroughly - if the PB2 is not blending well with the peanut butter, add a 1-3 tsp of water until mixture is combined.
- Add the remainder of the ingredients into the bowl. If needed, add honey to act as a 'glue' **depending on how the apple is diced will impact the overall formation of each bite. Fold until combined.
- Refrigerate for 10 minutes and form into 2” balls. Store in the refrigerator.
Notes
- Store the snack balls refrigerated for up to one week to maintain freshness and texture.
- They freeze well for up to three months when wrapped or bagged properly.
- Adding a bit of water or honey helps achieve a consistency similar to cookie dough for easy rolling.
- You can omit PB2 and increase creamy peanut butter by about a tablespoon if desired.
