Ingredients

Servings
  • 1 ½ cup flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ cup light brown sugar packed
  • 2 egg large
  • ¾ cup buttermilk
  • 3 Tablespoons butter melted, unsalted
  • 1 cup blueberries or fresh blueberries, pureed
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple pie spice

For the Streusel Topping

  • 12 Tablespoon butter softened, unsalted
  • cup sugar
  • 1 ½ cup flour

For the Vanilla Glaze

  • 1 cup powdered sugar
  • 2-3 Tablespoons milk whole
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F and coat donut pan with non-stick spray.
  2. Puree blueberries and set aside.
  3. Whisk together the flour, baking powder, baking soda, and apple pie spice.
  4. In a separate bowl, whisk together the eggs, sugar, buttermilk, melted butter and vanilla.
  5. Slowly pour dry ingredients into bowl of wet ingredients, mixing until just combined.
  6. Fold in the pureed blueberries.
  7. Pour or pipe donut batter into your prepared pan. Bake for 11-13 minutes or until a light golden brown on the outside.
  8. Remove from oven. Once cool enough to handle, pop donuts out of pan and onto a wire cooling rack.

For the Streusel Topping

  1. Add streusel ingredients to a medium mixing bowl. Use clean hands to work the mixture together into a crumble.

For the Vanilla Glaze

  1. In a clean mixing bowl, whisk together glaze ingredients until smooth.
  2. Dip the top of each donut in glaze and place back on the wire rack, glaze side up.
  3. Sprinkle each donut with streusel topping.
