													This apple chicken sheet pan dinner is a healthy chicken recipe featuring juicy, flavorful chicken. Sweet potatoes and onions make the sheet pan chicken a complete meal. And because it’s a one-pan dinner, clean-up is super easy!

                                Ingredients
- 4 chicken quarters
 - 3 tablespoons olive oil (divided)
 - 2 teaspoons salt
 - 1 teaspoon black pepper
 - 1 red onion (thickly sliced)
 - 1 large sweet potato (peeled and cut into 1/2 inch slices)
 - 2 Honeycrisp Apples (sliced into ½ inch slices)
 - salt and pepper for topping the veggies before they bake to taste
 
Instructions
- Preheat oven to 400 degrees Fahrenheit.
 - Brush chicken with 1 ½ tablespoons of olive oil.
 - Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper.
 - Place chicken quarters on a large sheet pan. Arrange an even layer of red onions, sweet potatoes and apple slices on the pan. (Place onions under a corner of the chicken to ensure even cooking.) Sprinkle vegetables with remaining olive oil, salt and pepper.
 - Top with a loose layer of aluminum foil. Bake for 35 minutes.
 - Remove aluminum foil, and place back into the oven until the chicken has cooked thoroughly and is golden brown, about another 10 minutes. The internal chicken temperature should read 165 degrees Fahrenheit.
 - Place the sheet pan dinner under the broiler for the last 2 minutes for a crispier skin and more golden brown color.
