Apple Cider Doughnut Cake

Apple Cider Doughnut Cake is a bundt cake combining all-purpose and oat flour with apple cider, applesauce, and warm spices. The cake has a tender crumb with a sweet cinnamon-sugar coating brushed on top with melted butter. This cake captures doughnut flavors in a single baked form suitable for sharing and slicing.

Description

This cake uses a blend of all-purpose flour and oat flour combined with cinnamon, baking powder, soda, and salt to create a spiced, somewhat moist doughnut-inspired cake batter. Apple cider and applesauce provide moisture and fruit flavor, while vegetable oil and eggs contribute to its tender crumb. Vanilla extract adds aroma.

Once baked in a well-greased bundt pan until a toothpick inserted comes out clean, the cake is inverted, brushed with melted butter, and coated generously with a cinnamon-sugar mixture. This topping adds a crunchy, sweet shell reminiscent of classic apple cider doughnuts.

The cake can be served for breakfast, dessert, or alongside coffee or tea. Variation ideas include substituting cardamom for cinnamon, adding diced fresh apples into the batter for texture, or using apple butter in place of applesauce. A glaze of cider and powdered sugar may also be drizzled as an alternative topping.

Ensure the bundt pan is thoroughly buttered and floured to prevent sticking. For a flavor variation, substitute cardamom for cinnamon or add diced fresh apples to the batter.Apple butter can replace applesauce as a moisture and flavor component.Instead of topping with cinnamon sugar, consider drizzling a simple glaze made from apple cider and powdered sugar.

Ingredients

Servings

dry ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups oat flour
  • 1 1/2 cups sugar
  • 1 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

wet ingredients

  • 1 cup apple cider
  • 3/4 cup applesauce
  • 3/4 cup vegetable oil I use safflower
  • 3 egg room temperature, large
  • 2 tsp vanilla extract

topping

  • 2 Tbsp butter melted, unsalted
  • 1/4 cup sugar
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350F
  2. Generously butter and flour your bundt pan, making sure to get into all the nooks and crannies. Don't skip this step!
  3. Whisk the dry ingredients together in a large mixing bowl.
  4. Whisk the wet ingredients together in a another bowl.
  5. Add the wet ingredients to the dry and whisk until just combined, don't over mix.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted near the center comes out without wet batter clinging to it. Set the pan on a cooling rack for 15 minutes.
  7. Stir the sugar and cinnamon together for the topping.
  8. Invert the cake onto a plate. Brush with the melted butter, and sprinkle generously all over with the sugar.

Notes

  • Generously butter and flour the bundt pan to prevent the cake from sticking.
  • Replace cinnamon with cardamom for a different spice note or fold in finely diced fresh apples for added texture.
  • You can substitute apple butter for applesauce if desired.
  • Instead of the cinnamon sugar coating, make a simple glaze from apple cider and powdered sugar to drizzle on top.
